Recipe
1 rack of baby lamb chops (about 8)
1 tablespoon fresh thyme
1 tablespoon fresh rosemary
2 closes fresh garlic
1 thai chili pepper (or jalapeño)
2 teaspoons salt
4 teaspoons olive oil
the zest and juice of 1 lemon
Directions
Trim any hanging or excess fat from your chops. Cut them into single chops. Wash with lime juice and and pat dry.
Prepare the marinade. Chop the rosemary, garlic, thyme and peppers together. Place it in a bowl and add the salt, olive oil and the zest and juice of the lemon.
Pour the marinade over the prepared lamb chops. Mix and allow to marinate for 2-4 hours.
Heat your grill or grill pan on medium to high heat. Grill each chop about 90 seconds per side. This really depends on how you like your chops. 90 seconds will get the chops to medium.
Serve hot and enjoy!
