Recipe
4 boneless, skinless chicken thighs
2 tablespoon canola oil
6 leaves of romaine lettuce
2 jalapenos chopped finely
1/4 cup finely chopped cilantro
1/4 cup of finely chopped red onion
1 English cucumber, sliced lengthwise
8 cherry tomatoes, cut in half
2 large Tortillas
4-6 skewers (soak 30 minutes prior to use if using wooden)
For the Cilantro Yogurt Sauce
2 tablespoon low-fat, Greek yogurt
juice of 1 lime
juice of 1 lemon
pinch of salt, pinch of black pepper
1 teaspoon sambal
1 teaspoon finely chopped cilantro
For the Yogurt Marinade
1/4 cup of greek yogurt
1/4 cup olive oil
1 teaspoon freshly grated garlic
1 teaspoon freshly grated onion (grate on the small side of grater)
2 teaspoon red wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon turmeric powder
1 tablespoon garam masala
1 teaspoon salt
1 teaspoon black pepper
Directions
Trim the chicken of excess fat. Cut into 2 inch pieces. Squeeze the juice of the lime over the chicken. Rinse well with cold tap water. Drain and set aside.
Add all the ingredients Yogurt Marinade to a bowl and whisk together.
Pour the Marinade over the chicken, mix thoroughly. Cover and allow to marinate for 2 hours or more.
Whisk together all the ingredients under the Cilantro Yogurt Sauce in a small bowl. Set aside.
Heat gas grill to 350 degrees. Oil the grill with the canola before placing the skewers on it to prevent the chicken from sticking to it.
Skewer the marinated chicken pieces onto the skewers. Place on the grill and allow to cook for 3 minutes without moving them. Turn the skewers over and cook for another 4 minutes or until done. Let it rest for 5 minutes before serving.
Lightly heat the tortillas on the grill.
To the tortillas, add some of the Cilantro Yogurt Sauce, sprinkle some of the chopped cilantro, add 1 leaf of the lettuce, some tomatoes, cucumbers, jalapenos and onions.
Remove the chicken from the skewers and add to the tortillas.
Roll the Tortillas tightly and cut in half or eat whole if you like that!

If you have baked beans or cooked rice or black beans add some to your wrap!
