Recipe
12 jumbo chicken wings
2 tablespoon green seasoning
1 lime
1 tablespoon salt
1 tablespoon ground coriander
1 tablespoon cayenne pepper
1 tablespoon ground black pepper
2 cups all purpose flour
1 teaspoon baking powder
6 cups of cooking oil (approximately)
Green Seasoning ingredients
3 stalks of green onions
2 pimentos peppers (Trinidad seasoning peppers)
1 habanera pepper
6 cloves of garlic
1/2 a bunch of cilantro
2 tablespoon of fresh thyme
Place everything in a food processor and pulse together.
Dry Rub Ingredients
1/2 teaspoon smoked paprika
1/2 teaspoon peri peri powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon sesame seeds
1/4 teaspoon brown sugar
Directions
Wash the wings with the juice of 1 lime and remove any little feathers from it. Rinse with water and drain.
Season the wings with the green seasoning, coriander, salt, black pepper & cayenne pepper. Mix to coat all the wings. Set aside to marinade for at least 4 hours.
Heat your oil in a deep pot or fryer to 350 degrees. It is important that your oil is at the correct temperature.
In a separate dish add the flour and baking powder, with a teaspoon of salt. Mix together.
Dip the wings into the flour, then give it a little shake to shake off any excess flour. I did 3 at a time. As that is how much my fryer will hold without over crowding.
Only when you are ready to fry then you flour up your wings.
Once the oil is hot and at the correct temp, add in your wings gently so that the oil does not sputter. My wings were jumbo sized and it took 15 minutes for every three wings.
If you are using regular sized wings, fry it for only 12 minutes. Do not turn up the heat of the oil or it will burn and the inside will not cook fully. Be sure your wings are fully submerged in the oil as well for even frying. As you take your wings out from the oil sprinkle with the dry rub. Just a little to give it an extra boost.
Just keep frying in batches until all your wings are done.
After trying different ways of trying to get crispy wings…this was by far the best. with just a flour and baking powder base.
Serve hot with Ketchup, hot sauce and soy sauce as a dipping sauce. Yum.
