Recipe
1 1/2 cups of all purpose flour (plus extra for dusting)
2 tablespoons butter (softened)
A pinch of cinnamon or nutmeg (optional)
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon sugar
3/4 cups of warm water (approx..)
1 cup of vegetable oil (do not use olive oil)
Directions
To a large mixing bowl, add the flour. butter, baking powder, salt, sugar and cinnamon/nutmeg.
Using your fingers, rub in the butter. The flour will be fragrant!
Slowly pour in the water, while mixing the dough. You want a soft, smooth dough. Knead the flour for about 3-4 minutes. Form into a ball and cover with a damp paper towel.
Let the dough rest for 30 minutes.
After letting the dough rest, break it into 4 small pieces and shape into balls.
Let this sit for another 15 minutes, just so the dough rests after we messed with it.
In a skillet or frying pan heat the oil to medium heat. You want to make sure you the oil comes up at a 1/4 of an inch in the pan you are frying in.
Roll out each ball into small circles. My circles were a little big, so I used a cookie cutter to make them small and fancy!
You can test to see if you oil is hot by dropping a dusting of flour into the oil. If it sizzles right away it is ready.
Place the rolled out dough one at a time into the hot oil. the bake should puff and float within a few seconds. Once it swells flip and fry until brown.
Remove from the oil and drain on paper towels. Repeat for the rest of the dough.
Serve hot with butter and cheese, tomatoes choka, roasted eggplant choka, any curries, fried fish to make a fish sandwich.
