Recipe
10 cups of water or more
2 ears of corn, chopped into 5 pieces
5 ochre, tops and bottoms chopped off
4 Taro Root, peeled and cubed into 4 pieces
1 cup of sweet potato, peeled and chopped into 2 inch pieces
1 cup of Yucca root, peeled and chopped into 1 inch pieces
1 potato, peeled and chopped into 1 inch pieces
1 cup of carrots, peeled and cut at an angle
2 stalks of Chinese celery. chopped small
1 onion. chopped in 2 inch pieces
2 cloves of garlic, crushed
1 habanero pepper (do not pop it)
1 whole red snapper, sliced into steaks
2 tablespoons of green seasoning
juice of 1 lime
2 tablespoon golden ray butter
1 packet of Maggie Soup Mix
1 cup of macaroni noodles
Dumplings
1 tablespoon salt
FOR THE DUMPLINGS:
1/2 cup of all purpose flour plus more for dusting
1 tablespoon of water
1/4 teaspoon of salt
pinch of black pepper
pinch of sugar
Mix everything together to form a ball. Pinch off small piece and roll between the palm of your hands for form small spheres. Set aside, covered with a moist paper towel until ready to use.
Directions
Bring to a boil the water in a large stock pot.
Peel, wash and chop all of your root vegetables.
To the pot add the Yucca root, the Potato, the corn pieces and 1 tablespoon of the green seasoning. These will take the longest to cook. So give it a head start.
After about 8 minutes, add the garlic, carrots, celery, onions, habanero, sweet potato, taro root and 1/2 tablespoon of salt. Stir.
After 10 minutes of the vegetables cooking, add the soup mix and stir really well.
While the vegetables are cooking prepare your fish.
Wash you fish with the juice of the lime and rinse with water. Drain.
Season the fish with 1/2 tablespoon of salt and 1 tablespoon of green seasoning. Set aside until ready to use.
Test the tenderness of the root vegetables. If the yucca root is fork tender, add in the macaroni and the dumplings. Stir.
Now add in your fish. be very gentle with it when you are stirring the pot at this point. We do not want to break up the fish.
After the fish has been in about 6 minutes, taste the broth. If it has enough salt do not add any more. As the butter will also add some salt. If you like spicy, at this point you can pop your habanero. Otherwise leave it whole.
The fish will only take about 8 minutes total to cook through. Once it is cooked, add in the golden ray butter and turn off the heat.
NOTES*** If at any time the water in the pot is getting low just add more. All the root vegetables are starchy, including the noodles and the dumplings so this will reduce the broth drastically.
The best soup or broth for when you have a cold or the flu.
If you don’t like fish, simply substitute for chicken. Exact same recipe.
