Recipe
3 fillets of fresh Cod
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup of oil for frying
1/4 cup of flour
FOR THE BATTER:
1 cup of flour
1/4 teaspoon onion powder
1 teaspoon cayenne pepper
1/2 teaspoon oregano
1/2 teaspoon sweet paprika
1 cup of dark beer
FOR THE CHIPS:
2 large, long baking potatoes
1/4 teaspoon salt
Directions
Cut the fillets of cod into small fish stick sizes. Season with salt and black pepper. Set aside while you prepare the batter.
In a medium bowl add all the ingredients under the batter list. whisk together. The batter should be semi think so that it sticks to the fish. Set aside.
Heat oil to 300 degrees.
Wash and slice the potatoes into thick 1/2 inch sizes. Pat dry with paper towels.
Once the oil is 300 degrees, fry the chips a little at a time for 4-6 minutes. You will not get crispy or brown chips in this first go around.
Once all the chips has been fried once through, turn up the heat on the oil to 350 degrees. Re-fry the chips now just until it gets crispy and brown.
Once you remove it from the oil salt it right away.
Add 1/4 cup of flour to the seasoned fish.
Dip each piece of fish into the batter. Let it drip off a little before placing it in the oil. Before you let it go into the oil, swirl it around a little so that the batter can start to cook and not stick to the bottom of the pan or oil fryer.
Fry about 3 minutes each. Remove from the oil and drain on paper towels.
Serve with chips and an ice cold beer!
***Note if you are using a dark beer like I did, you batter will be on the darker side. If you use a lighter colored beer it will be a lighter batter.
