Recipe
2 cups of freshly grated coconut
1 cup of all purpose flour plus 1 tablespoon for dusting
1 teaspoon baking powder
1/2 cup of sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
2 tablespoon butter
1 egg
1/2 teaspoon coconut essence (OPTIONAL)
1/2 teaspoon mixed essence (can substitute with vanilla essence)
2 tablespoons raisins
2 tablespoons cherries
Directions
Preheat the oven to 375 degrees.
To a bowl add the grated coconut, flour, baking powder, sugar, nutmeg, cinnamon and butter. Mix together thoroughly.
In another small bowl mix together the egg, coconut essence and the mixed essence. Add to the dry ingredients batter. Mix together.
In another small bowl add the cherries and the raisins and add 1/2 teaspoon of flour to it. Mix together. The flour is to help the raisins and cherries to not sink to the bottom of the batter. Add it to the batter.
Grease and flour a baking sheet.
Start dropping the batter a little scoop at a time spaced about 2 inches apart on the baking sheet. The cookies will spread while it is baking so be sure to leave space in between it.
Place in the oven for 15 minutes. Remove once the cookies starts turning golden brown on top.
Sprinkle on the top some extra sugar. Serve with a cold glass of milk!
