Recipe
1 package of spaghetti
4 slices of bacon
1 cup of shredded carrots
1/2 of a white onion, pureed
2 cloves of fresh garlic, pureed
2 jalapenos, seeds removed and chopped small
1 pound of chicken tenderloins or chicken breast
juice of 1/2 a lime
2 8 ounce cans of tomato sauce
1/2 cup of chicken broth
1/2 cup of dry white wine
1 tablespoon fresh thyme
1 tablespoon fresh chopped Oregano
1 tablespoon granulated sugar
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon pepper flakes
1 tablespoon of Italian seasoning
1/4 cup of flat leaf parsley, chopped
Directions
Chop your chicken tenderloins or boob into small 2 inch pieces. Remove any hanging fat from it. Squeeze the juice of the lime over the meat, rinse with cold running water. Drain.
Season the chicken with 1/2 teaspoon of Italian seasoning, salt and black pepper. Set aside to marinate for 30 minutes.
Heat a large, deep skillet on the stove on medium heat. Chop the bacon in small, 1 inch pieces. Once the bacon is cooked and crispy, remove from the heat and drain it on a paper towel.
To the bacon fat that was rendered, add in the seasoned chicken pieces. Cook until the chicken is fully cooked. Remove from the heat and place in a small dish until ready to use.
Add in the onions, carrots and peppers to the skillet and cook until the vegetables are just softened. Add in the garlic, cook for about 30 seconds. Pour in the white wine. Scrape up any bits that have been stuck to the bottom of the pan.
Once the wine has cooked off, add in the 2 cans of tomato sauce, the cooked chicken, the chicken broth, salt, pepper, pepper flakes, sugar, Italian seasoning, thyme and oregano. Mix and cover with a lid.
Let the sauce cook on low heat for about 20 minutes. Stir it occasionally.
Cook the pasta to the directions on the box, removing it from the water about 3 minutes early. We don’t want the pasta too soft or fully cooked because it will finish cooking in the sauce.
After draining the water to from the pasta, add the pasta to the sauce and toss it really well. Add back in the bacon.
Once the pasta is now fully cooked, taste for more salt and pepper. Remove from the heat and add in the parsley.
Serve with bread sticks and a salad.
