Recipe
6 boneless, skinless chicken thighs (or you can use pre-ground chicken)
juice of 1 lemon
1/4 cup of yellow split peas
12 leaves of mint
3 red thai chili peppers (OPTIONAL)
1 tablespoon fresh garlic
1 teaspoon fresh ginger
1/4 of a large red onion
1 cup of cilantro
1 tablespoon garam masala
2 teaspoon ground coriander
2 teaspoon cumin powder
1 teaspoon cayenne pepper
1 teaspoon tumeric powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablspoons of olive oil
CONDIMENTS (OPTIONAL)
6 tortilla skins, warmed through
6 leaves of romaine lettuce
1 cucumber, sliced lengthwise
1/4 cup red onions, diced small
1 tomato, sliced
2 jalapenos, diced small
2 tablspoons of chopped cilantro
FOR THE RANCH-MAYO SAUCE:
2 tablespoons mayo
1 tablspoon ranch dressing
2 tablspoons half and half milk
2 tablspoons of chopped cilantro
pinch of salt
pinch of black pepper
Directions
Soak your wood skewers in water for 30 minutes if you are using wooden ones.
Toast the split peas in a small skillet on the stove over medium heat. Just until it starts to brown. About 3-4 minutes. Once it is toasted, grind it in a spice grinder until it is in a powdered form.
Break down the chicken thighs into 2 inch cubes.
Add everything to a food processor and pulse until the meat is ground and the herbs and spices are mixed in. Move to a bowl and cover and allow to sit for 30 minutes.
Using the wooden skewers form the kebabs around it.
I used an indoor grill pan on my stove top. If you are doing it indoors, using a brush or paper towel oil the grill pan or the grill grates with a touch of cooking oil. NOT Olive oil. Olive oil will cause it to smoke. Then you will be all smokey!
When you place the kebabs on the grill you should hear a searing sound. Turn it every 1-2 minutes so that it cooks through and evenly.
About 5-6 minutes depending on the size of your kebabs.
FOR THE RANCH-MAYO SAUCE
Add everything to a small bowl and whisk together. Keep chilled.
Assembling the Kebab Wraps:
Lay your tortilla on a flat surface, add some sauce, sprinkle on some cilantro, lay down your kebab, and add whatever condiments you like!
Roll into a tight burrito style wrap and enjoy!
