Recipe
1 cup of chicken breast cut into 1 inch cubes.
1 red bell pepper
1 cup of shredded carrots
2 cups of cooked parboiled rice
1 tablespoon freshly grated ginger
1 tablespoon freshly grated garlic
1 Trinidad seasoning pepper (optional)
2 Thai chili peppers
1 1/2 teaspoon browning (kitchen bouquet thick soy sauce)
1 tablespoon sesame oil
1 tablespoon vegetable oil
1 tablespoon Chinese seasoning salt
1/2 cup freshly chopped cilantro
1 tablespoon green seasoning
1 tablespoon Worcestershire sauce
1/2 tablespoon black pepper
1/2 tablespoon Kocher salt
Recipe for green seasoning
1/2 cup of fresh cilantro
3 cloves of garlic
1 small piece of ginger
2 stalks of green onions
3 leaves of culantro (optional)
Place the ingredients for the green seasoning into a food processor and mince to a fine paste.
Directions
Rinse and drain your pieces of chicken with cold tap water. Season the chicken with the green seasoning, Worcestershire, salt and black pepper. Set aside to marinate.
Prepare your vegetables. chop the sweet pepper into small cubes.
Shred your carrots or this can be chopped into small cubes as well like the sweet pepper.
On the stove top heat a wide wok or skillet to medium heat.
Add the 1/2 teaspoon sesame oil and 1/2 the vegetable oil.
Once the oil has heated, add the chicken. Make sure to spread it out in the pan. Let this cook through until the chicken is almost done.
Add in the carrots. Let the carrots cook with the chicken for 3 minutes. Because the carrots takes longer to cook we are giving it a head start to the sweet peppers.
After 3 minutes add in the sweet peppers, the garlic, ginger and peppers.
Let this cook until the sweet peppers are starting to soften up.
Add in the soy sauce a 1/2 teaspoon at a time. The color of the rice depends on how you like yours. I like mine a little brown so I added more soy sauce. If you are not using the thick soy sauce, remember regular soy sauce has salt.
Add in the cooked rice. Mix everything together. now add the Chinese seasoning salt.
Taste if it needs more salt. If you need more salt add Kocher salt.
Once the rice has heated through turn off the stove and add in the chopped cilantro.
