Recipe
For the Broth
1 smoked Turkey wing or leg
2 black cardamom pods
5 green cardamom pods
1/2 teaspoon black peppercorns
1/2 teaspoon coriander seeds
1 stick of cinnamon
1/2 teaspoon cumin seeds
8 cups of water
1/2 white onion
2 cloves of garlic
For the Rice
2 cups Basmati Rice
1/2 cup dried cranberries
1/2 cup dried apricots
1/2 cup chopped almonds
1 white onion cubed small
2 cloves of garlic freshly grated
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
1 habanero pepper (optional)
1 pimento pepper (Trinidad seasoning pepper) optional
1/4 cup or 4 tablespoon butter
1 teaspoon Kocher salt
1/2 cup finely chopped cilantro
Directions
The Broth
On the stove, bring to a boil 8 cups of water. Submerge the turkey wing and add all the ingredients listed under the Broth.
Let this simmer on low heat for approximately 1-11/2 hours. The broth will start to smell fragrant and the Turkey wing will be easy to pull apart.
Once the broth is complete, drain the broth with a fine mesh strainer. Set aside the broth. Discard everything else besides the Turkey wing. Once the wing has cooled enough to handle, shred it or cut it up into small little cubes. Set aside.
For the Rice
Heat a wide skillet on the stove and melt the butter. Add the chopped onion and let this sauté for 3 minutes. Next add in the cumin, turmeric, garlic and peppers. Mix and continue to let this sauté for 2 more minutes.
Wash and drain your basmati rice. Add the washed rice to the skillet. Keep mixing the rice for at least 5 minutes. You want to see the rice just starting to stick. Add in the salt and 2 cups of the broth.
Stir and place a cover over the skillet. Turn the heat to LOW and allow this to simmer for 30 minutes without removing the lid.
After 30 minutes remove the lid and check the consistency of the rice. The rice should not be too soft. And the liquid should have cooked off by then. Add in the chopped turkey meat and the dried fruits and nuts. Mix and cover again for another 5-8 minutes.
Turn off the heat and add in 1/2 cup of finely chopped cilantro.
Serve with curry chicken or baked or heck any type of meat!
If you want to make this vegetarian rice Omit the Turkey wing.
