4 strips of bacon 1 pound of fingerling potatoes preboiled 2 jalapenos finely chopped 1 shallot finely chopped 2 tbsp butter salt & pepper to tastes

Directions:
Heat a flat skillet or frying pan on medium heat to fry your bacon. After frying remove and break up into small pieces. In the same skillet, add your shallots and jalapenos, allow to fry for about a minute. Add your potatoes that has been boiled and chopped into small cubes. Add your butter. Leave the potatoes alone to crisp up. After 5 minutes on one side use a spatula and turn the potatoes to brown on the other side. Add your crumbled up bacon back to mixture, season with salt and pepper to taste.
Serve with eggs, and toast!
