1 tablespoon sesame oil
1 teaspoon freshly grated ginger
1 teaspoon freshly grated garlic
1 cup of chopped smoked or left over turkey meat
1 cup of shredded Brussel sprouts
1 cup of shredded carrots
1 cup of cold soba noodles
1/2 cup of bean sprouts
1/4 cup of chopped garlic chives or regular chives
1/4 cup of chopped cilantro
1 tablespoon dark soy sauce
1/2 teaspoon of Chinese salts or regular kosher salt
Heat a wok or wide frying pan on medium heat. Add the sesame oil, once its hot add the ginger.
Continuously stir frying the ginger until it separates, then add the garlic and stir fry again.
Add the carrots and chopped turkey stir fry for 2 minutes. Keep moving the veggies and meat around as it cooks.
Add in the Brussel sprouts and saute for another 2-3 minutes until the Brussel sprouts starts to while a little.
Then add in the noodles and the soy sauce. Stir fry until the noodles has darkened from the soy sauce, then add in the chives, bean sprouts and cilantro.
Season with the Chinese salts to taste. Remove from the heat and serve hot!
