1/2 pound of Hot Italian Sausage

1/2 pound of ground pork and bacon

1/2 cup of diced onions

1 cup of green peas

1 cup of corn kernels

1/4 cup of green bell peppers, diced

1/4 cup of red bell peppers, diced

1/4 teaspoon salt

1/4 teaspoon ground coriander

1/4 teaspoon black pepper

1 cup of cream of mushroom

1 cup of cream of chicken

2 cups of shredded cheese

2 tablespoon of chopped green onions

1 tablespoon finely minced cilantro

4 cups of frozen tater tots


Pre-heat Oven to 350 degrees.

To a skillet on medium heat, add the ground hot Italian sausage and the ground pork and bacon meat. Break up the meat while it is browning.

After the meat is browned, remove from the skillet and drain the extra fat.

Add in the chopped onions, peppers, salt, coriander and black pepper. Sauté for 5 minutes or until the onions and peppers are cooked.

Add in the cream of mushroom and the cream of chicken. Stir and allow to heat through.

Add in 1 cup of shredded cheese and the green onions. Once the cheese is melted into the sauce and the sauce is on a gentle bubble, remove from the heat and add in the chopped cilantro.

To the casserole dish that you will be baking the Tater Tots in, pour the sauce in first.

Sprinkle on half of the shredded cheese. Then layer on the frozen tater tots completely covering the sauce. Sprinkle on the rest of the cheese.

Place in the oven for 45 minutes.

Remove and serve hot.
