3 green mangos
4 cups of water
1 1/2 cups brown sugar
2-3 drops of red coloring
1 stick of cinnamon
1 habanero pepper
1/4 teaspoon fresh garlic
1 teaspoon salt
Bring to a boil a large stock pot with the 4 cups of water.
Chop each mango down the middle and then cut each half in 3-4 pieces. Remove the hard pit inside of the seed. Be sure to keep the seed itself.
Add the mangoes to the boiling water. Add all the rest of the ingredients to the pot and cook until the mangoes are soft and the syrup thick.
Remove the cinnamon stick and allow to cool. If the mangoes were sour, add more sugar if need be.
