10 mini Ciabatta Bread

1/4 cup of diced medium cheddar cheese

1/4 cup of diced white cheddar cheese

1/4 cup shredded pepper jack cheese

4 tablespoons unsalted butter

2 tablespoons garlic flavored olive oil

1 teaspoon grated fresh garlic

1/4 teaspoon black pepper

1/4 teaspoon chopped chives

pinch of salt


Heat the oven to 375 degrees.

Place the bread on a baking sheet. Make 3 cuts length wise across each bun. Turn the bun in the opposite direction and make two more slits to make diamond shapes.

Start stuffing the bread in between the slits with the cheeses. Only use the diced cheddar to stuff with.

In a small bowl add the butter, olive oil, garlic, black pepper and salt. Melt in the microwave for 20 seconds. Mix.

Baste the Ciabatta buns liberally with the butter mixture. Sprinkle with pepper jack cheese and chives.

Place in the oven and bake until the bread is golden brown and the cheese is melted.

This goes perfect with Chicken Soup or a yummy red pasta sauce!
