1 cup of Mexican Creme
1/4 teaspoon garlic powder
1/2 teaspoon cayenne pepper (or paprika)
1/4 cup of lemon juice
4 ears of corn, roasted over a grill
1 cup of black beans
2 green jalapeños, cubed small (de-seeded)
2 red fresno peppers, cubed small (de-seeded)
1/2 cup of red onion, chopped small
1 cup of cilantro, chopped fine
1/2 cup of cojita cheese
1 teaspoon salt
1 teaspoon black pepper
In a small bowl mix together the Mexican creme, garlic powder, cayenne powder and lemon juice. Set aside.
Roast the 4 ears of corn on your grill or you can shave the kernels off the cub, and fry in a dab of butter on the stove top.
To the corn kernels, add the black beans that has been drained and rinsed thoroughly, add the peppers, onions and cilantro.
Mix in the creme mix, the cojita cheese and season with salt and pepper.
Serve with this delicious Mexican Inspired Grilled chicken.
