1 Cornish Hen

4 tablespoon Cajun spice Rub

1 teaspoon salt

1 teaspoon black pepper

1/2 cup of Blue Berry BBQ Sauce


Split the Cornish hens down the middle to make two halves.

Sprinkle salt and black pepper and run it in well with your hands.

Sprinkle the Cajun spice rub generously all over the hens. Rub it in well with your hands.

Allow to marinate for 30 minutes.

Heat your outdoor grill to 375 degrees. Place the hens skin side down first. let it grill for 4 minutes without moving it.

Flip and allow the other side to cook. When the hens are almost done start basting each time you flip with the Blue Berry Sauce.

Remove from the heat once the internal Temp says 165 degrees or the juice are running clear.

Let it sit for a few minutes before cutting!
