1 pound of fingerling potatoes, scrubbed and dried

1 tablespoon Italian seasoning

3 slices of bacon, cut into pieces

1 teaspoon fresh garlic

1 teaspoon cayenne pepper

1 tablespoon salt

1 teaspoon black pepper

2 tablespoon butter

1 tablespoon, chopped chives or green onions for garnishing


Add the potatoes to a bowl, season with Italian seasoning, cayenne pepper, salt and black pepper.

Heat a skillet on medium heat on the stove. Add the pieces of bacon to render.

Once the bacon is semi crispy, add the seasoned potatoes, turn the heat to medium and cover with a lid.

Cook until the potatoes and fork tender. Remove the lid and add the butter and garlic. Sauté until the potatoes starts to get crispy and brown.

Remove from the heat and garnish with green onions or chives.
