4 ears of fresh young sweet corn
1 cup of cotija cheese
1 tablespoon of fresh dill
1 tablespoon of unsalted butter
1 teaspoon of paprika
1 teaspoon of fresh ground garlic
1 tablespoon salt
Heat oven to 400 degrees.
Place a pot on the stove filled with water, bring to a boil.
While the water is coming to a boil, peel your corn and remove any tiny hair on it.
Add salt and crushed garlic to your boiling water. Drop the corn in the water.
Let this cook and boil for 10 minutes. Remove from water and place on a baking sheet. Rub the hot corn with the butter. Sprinkle the cojita cheese, dill and paprika over your corn.
Place in the oven for 8 minutes. Remove and need I say it…Enjoy!
