I am in my third week of my boot camp…The running is getting easier, if that is even possible. The exercises, is tougher with each session. I was thinking as time goes on it would get easier as my body adjusts to the work outs. But my trainer somehow finds a new way to torment us each week!

It is so hard to lose the last 3 pounds. I feel like I am at a pause in my work outs. I don’t know how to get over this bump. It doe snot help that my mom is still here cooking up a storm every day! I do like coming home to a hot meal and laundry done! I cannot complain. Its awesome!!!

But to give her a break from the Trinidad food all the time I made steaks and pork chops with salad and a quick and easy Grilled Baby Potato. Everyone loved the potatoes. It was nothing fancy or hard. Give it a try!

It sure was a lazy sort of weekend for me. First off my mommy is here visiting with us. Which means, she does all the cooking, cleaning and the laundry. I get to request anything I want her to make! How cool is that!

She is here to spend time with our little monster, who is not so little anymore. She is ten now! I remember when she was a baby and I had to get in my car and drive around the block just so she can fall asleep. People ask me all the time when are you going to have kids? I remember all the sleepless nights with the monster and I ask myself if I can go through all of that again!

So while my mommy is here, we had a serious Trini Sunday lunch menu yesterday! It was so good…she made Fried Rice, potato salad, Fried Chicken and I made the Chicken Chowmein. Talk about over loading on the Carbs! All of which you can find the recipes for on my site, besides the potato salad. I have not posted that recipe yet.

It has been raining since Saturday! I am not complaining. I love it. I love to fall asleep to the sound of the rain falling on the roof top.

In honor of fathers day I made a Porchetta. Now it is very hard to find fresh pork belly with the skin on. I had to make the trek out to another part of town to find one. When I got home and got my belly thawed out, I found out that there was no skin on it! OYE

So I had to start my search all over again. I finally found one very close to my home at a restaurant depot. It was the last one on the shelf. Talk about being lucky.

So what were your plans for Fathers day? We spent it at my sister’s home. I made a roast duck, with the Porchetta and a refreshing salad!

Okay I have a major pet peeve!

Have you ever been in the situation where a friend or family member asks you out to dinner or for drinks. You are both sitting there chilling, talking, catching up and while you are really into your story, the other person pulls out there phone and starts texting, or checking facebook?

OMG…nothing drives me more insane than someone doing that while I am out with them. Okay if your phone rings…no worries, but seriously…you have to text and check facebook while I am talking? Like my conversation is boring you. How rude!

I am trying to teach my niece not to bring any phones or smart tabs to the dinner table. Thus far she has really been good with that stuff.

So boys and girls…try to put the gadgets away while in company…it can wait.

So this is a quick recipe called Bunny Chow. It is an African street food. I love, love street food.

Can you believe I signed up for a boot camp at my gym? Holly Hannah! I got the first day out of the way. The first day is always the toughest as you never know what to expect or how hard the work out will be.

We started out with a half a mile jog, followed by step-ups onto a park bench! Very high, especially with my short legs. Then squats. That surely got our heart rates up. Then we did push-ups followed by crunches. That was one set, so we had to repeat that 2 times.

For the next set we did high jumps while running, then reverse with the back of the legs and then the inner thighs. That was another set.

Then we had to jog back to the gym. It was for 45 minutes. Everything was done outdoors using your body weight, proving you really don’t need a gym membership to be active.

So I will be doing 16 sessions of this spread over 8 weeks. Wish me luck!

Onto what I cooked this week. Now that the hard part of being healthy is out of the way…I made this week Shrimp Fried Rice and Fried Chicken Wings.

The Fried Rice is made the traditional way we make it in Trinidad. Fried Rice is mostly made on a Sunday or for special occasions, back home as this is the day a huge lunch is prepared. We look forward to Sunday lunch, after church or just before the start of a really good Indian move! God help us is current (electricity) goes that day!

I am constantly on the look out for a really good Fried Chicken Wings recipe. This is just one version of many that I have tested. It did come out the best thus far. The simple breading of the flour with baking powder was perfect.

For Fathers day I shall be making a Porchetta!
